Amaryllis C. Carros, 84, a resident of Forty Fort, passed away peacefully at her home, surrounded by her loving family, on Saturday afternoon, June 13, 2015.
Her beloved husband was the late Peter J. Carros Sr. Together, Peter and Amaryllis shared 51 beautiful years of marriage.
Born on May 21, 1931, in Schenectady, New York, Amaryllis was one of three daughters born to the late Vincent and Antoinette (Masullo) Rainone.
Raised in Schenectady, New York, she received her early education there, and then went on to attend Pratt Institute, Brooklyn, New York, where she received her degree in Hotel and Restaurant Management.
Prior to her retirement, Amaryllis was employed as a cook for the retired Sisters of Mercy at Marywood Nursing Center, Scranton. In her earlier years, she managed the Overbrook Tea Shoppe on Public Square in Wilkes-Barre, and also managed the Castle Restaurant in Scranton.
A faithful Catholic, Amaryllis was a member and volunteer of Saint Elizabeth Ann Seton Parish, Swoyersville. She also volunteered at John Heinz Rehabilitation Center, Wilkes-Barre.
Amaryllis lived up to her name which means pride, determination and radiant beauty. She made a lasting impression with everyone she met. Her eyes sparkled, her smile lit up a room, and her dimples were unforgettable. She loved her children and instilled in them her values, sense of adventure and independence.
Amaryllis made a huge impact not only on her family but with anyone she came in contact with. Here is a fraction of what she taught us: Never pass up an opportunity to take a trip or go on an adventure; Exercise daily; Make time to sit on a porch with your friends; Cook good food for everyone whether you know them or not; Make every meal a celebration; Always look for the good; Embrace change; Have faith and be strong; Don't take shortcuts; Enjoy your flowers, drink wine and dance; Accept people for who they are; There's no such thing as too much sequins; Help others; No home is complete without a gazebo in the backyard, and a convertible in the garage!
Amaryllis is survived by her children, Alexa Carros Laughlin, Forty Fort; Daryl (Joseph) Bojarcik, Wyoming; Toni (Diane Lasher) Carros, Limerick, Maine; Pier Carros, Ellsworth, Maine; Peter J. (Rosemary) Carros Jr., Danville; and Penny (Dennis) Durbiano, Pittsburgh; her grandchildren, Peter J. Carros III, Nicole Carros, and Alexandra Laughlin; her great-grandchild, Harper Jade Carros; her sisters, Mary Pedone and Beverly Czub, both of Schenectady, New York; her many nieces and nephews.
